🧾 Ingredients

For the Stroganoff:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced into strips
  • Salt & black pepper, to taste
  • 2 tbsp olive oil or butter
  • 1 medium onion, thinly sliced
  • 2–3 cloves garlic, minced
  • 8 oz (225g) mushrooms (cremini or white), sliced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth (low sodium)
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ½ cup sour cream
  • Fresh parsley, chopped (for garnish)

For the Noodles:

  • 12 oz egg noodles
  • Salt for boiling water
  • 1 tbsp butter (optional)

🍳 Instructions

1. Cook the Egg Noodles

  • Bring a large pot of salted water to a boil.
  • Cook egg noodles according to package directions until al dente.
  • Drain and toss with a bit of butter (optional). Set aside.

2. Prepare the Beef

  • Season beef strips with salt and pepper.
  • Heat 1 tbsp oil or butter in a large skillet over medium-high heat.
  • Sear the beef in batches (don’t overcrowd) until browned (about 1–2 minutes per side). Remove and set aside.

3. Sauté Veggies

  • In the same skillet, add remaining 1 tbsp oil/butter.
  • Add onions and mushrooms; sauté for 6–8 minutes until browned and soft.
  • Add garlic; cook for 1 minute.

4. Make the Sauce

  • Sprinkle in flour and stir to coat the vegetables.
  • Slowly add beef broth, stirring constantly to avoid lumps.
  • Stir in Worcestershire sauce and mustard.
  • Simmer for 5–7 minutes, until thickened.

5. Add Beef & Finish Sauce

  • Return cooked beef (with any juices) to the skillet.
  • Reduce heat to low and stir in sour cream. Do not boil (it can curdle).
  • Taste and adjust seasoning with salt and pepper.

6. Serve

  • Serve over a bed of egg noodles.
  • Garnish with fresh parsley for a rustic touch.
