Ingredients:

For the Potato Filling:

  • 2 cups mashed potatoes (leftovers work great)

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Salt & pepper, to taste

  • 1–2 tablespoons chopped chives or green onions (optional)

For the Cheese Center:

  • 1 cup cubed cheese (½-inch cubes of mozzarella, cheddar, or pepper jack)

For Breading & Frying:

  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 ½ cups seasoned breadcrumbs or panko

  • Oil for frying (vegetable or canola)

For Garlic Butter:

  • 3 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • 1 tablespoon chopped parsley (optional)

  • Pinch of salt

🥄 Instructions:

1. Make the Filling:

  • In a bowl, mix mashed potatoes with shredded cheese, garlic powder, onion powder, chives, salt, and pepper until smooth and scoopable.

2. Form the Bombs:

  • Take a tablespoon of the potato mixture and flatten it slightly in your hand.

  • Place a cube of cheese in the center and wrap the potato around it, forming a smooth ball.

  • Repeat until all the mixture is used.

3. Bread the Balls:

  • Roll each ball in flour, then dip in beaten egg, then coat with breadcrumbs or panko. For extra crunch, double dip in egg and crumbs again.

  • Place them on a tray and refrigerate for 15–20 minutes to firm up.

4. Fry the Bombs:

  • Heat 2–3 inches of oil in a deep pan to 350°F (175°C).

  • Fry the bombs in batches for 2–3 minutes, or until golden brown and crispy.

  • Drain on a paper towel-lined plate.

5. Make Garlic Butter:

  • In a small saucepan, melt butter over medium heat.

  • Add minced garlic and cook for 1 minute until fragrant.

  • Stir in parsley and a pinch of salt.

6. Finish & Serve:

  • Brush or drizzle the hot garlic butter over the fried potato bombs.

  • Serve immediately while the cheese is gooey inside.

 Serving Tips:

  • Serve with marinara, ranch, or spicy mayo for dipping.

  • Add bacon bits or jalapeños to the filling for extra flavor.
