Carrot Salad with Pineapple and Raisins

Ingredients:

2 cups shredded carrots

 

1/2 cup crushed pineapple, drained

 

1/4 cup raisins

 

1/4 cup Greek yogurt

 

1 tbsp honey

 

1/2 tsp lemon juice

 

1/4 tsp cinnamon

Combine the salad base:

In a large bowl, mix together the shredded carrots, crushed pineapple, and raisins.

 

Make the dressing:

In a small bowl, whisk together the Greek yogurt, honey, lemon juice, and cinnamon until smooth.

 

Mix it all up:

Pour the dressing over the carrot mixture and stir until everything is evenly coated.

 

Chill (optional):

For best flavor, refrigerate for 30 minutes before serving to let the flavors meld.
